Post-Harvest process

Having completed the harvest of walnuts, the peeling is done immediately in order to maintain the quality of the fruit. Peeling is done manually by removing the green shell of the fruit. Then follows the drying process during which, after placing the walnuts in large crates, we expose them to the sun so that natural drying can take place. Once the necessary degree of moisture is reached, our walnuts are now ready for storage and sale.

With the use of mechanical means, the post-harvest process is completed quickly and more efficiently. The mechanical peeler is a kind of washing machine that, while rotating, peels and washes the fruit at the same time, managing in no time to peel large quantities of walnuts. Along with the use of dryers, uniform drying and production quality assurance are achieved.
